Quinoa Vegetable Soup

Quinoa Recipes Offered by Vancouver Chiropractor

Another hearty and delicious fall soup great for any night of the week.

2 cloves garlic, chopped
¼ cup quinoa (well rinsed)
1 tsp olive oil
½ cup carrots, diced
¼ cup celery, diced
¼ cup green pepper, diced
2 tbsp onion, chopped
4 cups water
½ cup cabbage, chopped
1 tsp salt
2 tbsp parsley, chopped

1. Sauté quinoa, carrots, celery, onions, green pepper, and garlic in oil until golden brown.
2. Add water and cabbage and bring to a boil.
3. Simmer 20 to 30 minutes or until tender.
4. Season to taste and garnish with parsley.

For variations, try adding some of your other favourite vegetables, chopped, and sautéed.

Serves 4 – 6
